In an industry driven by taste and timing, one thing is clear: Flavor sells. During Wednesday morning’s “Hot Today, Gone Tomorrow? Navigating Flavor Trends” Education Session, Philip Santini, Rutter’s senior director of foodservice and bar strategy, peeled back the layers on how new flavors make it from idea to menu—and when you know it’s time to move on.
For Rutter’s, a 90-plus-store retailer, innovation starts with a straightforward question: Why does flavor matter?
“Flavor is the heartbeat of innovation. I didn’t come up with that, but it’s true,” said Santini. “It’s one of those things that you definitely need to be paying attention to and focusing on.”
From global travel to supplier pitches, flavor inspiration comes from everywhere—but execution is everything. Santini outlined the flavor lifecycle, from discovery to hype to mainstream adoption (and sometimes decline), and stressed the importance of evaluating each idea for approachability, scalability and brand fit.
“Does it feel like your brand? For us, it’s very easy to bring in something because we have such an expansive menu,” Santini said. “There are many, many categories where we can cross-utilize a product. Does it fit a daypart? Does it not fit a daypart? Can you source it in a reliable fashion?”
Rutter’s process blends cross-functional collaboration and rapid prototyping to refine ideas, backed by data on buying habits, frequency and market trends. A structured 20-week plan ensures consistency—from training store teams and planning in-app promotions to coordinating vendor partnerships and tracking performance through KPIs.
The result is a playbook that’s as analytical as it is creative. Campaigns are designed around “moments that matter,” pairing seasonality and cultural touchpoints with a sense of curiosity and urgency.
Ultimately, not every flavor can—or should—last forever. LTOs provide operators with the opportunity to test bold ideas, create urgency and build excitement without incurring long-term risk. Then brands can decide whether to sunset or graduate new items to the permanent menu.
